Grilled chicken tikka skewers
This low-calorie dish is a breeze to make and full of flavour.
 

For the salad

150g low-fat natural yogurt

2 tbsp curry paste

515g boneless, skinless chicken breasts, cubed

4 wholemeal chapatis or wraps, warmed, to serve

½ cucumber, halved lengthways, deseeded and sliced

1 red onion, thinly sliced

Handful chopped coriander leaves

Juice 1 lemon

50g pack lamb's lettuce

Put 8 wooden skewers in a bowl of water to soak if you are not using metal one's. In a bowl, mix the yoghurt and curry paste together then add the chicken and marinate ideally for an hour.

In a large bowl, toss together the cucumber, red onion, coriander and lemon juice. Chill until ready to serve.

Shake off any excess marinade, then thread the chicken pieces.

Cook under a medium grill for 15-20 minutes, turning from time to time, until cooked through and nicely browned.

Stir the lettuce into the salad.

Serve with warmed wholemeal chapati, wholemeal wraps or pita bread.
