Halloween pumpkin & apple muffin

Lovely moist muffins and so easy to bake once you have your puree prepared.
300g plain flour (sieved)
350g caster sugar
1½ tsp ground cinnamon
¾ tsp ground nutmeg
¾ tsp ground ginger
¼ tsp ground cloves
1 tsp bicarb of soda
½ tsp salt
2 eggs, lightly beaten
250g pumpkin puree
125ml vegetable oil
250g peeled, cored and chopped apple
Preheat oven to 180⁰C/350⁰F/gas mark 4 and set out muffin or bun tins. Lightly grease or line with paper cases.
Put the flour, sugar, spices, bicarb of soda and salt into a large bowl and mix well.
In a separate bowl mix the oil, eggs and pumpkin puree.
Add the pumpkin mixture to the flour mixture and stir to combine.
Fold in the chopped apples.
Spoon the mixture into prepared tin.
Bake for 35 to 40 minutes, or until a skewer inserted into a muffin comes out clean.
