Healthy and delicious rhubarb oat bars
The baking solidifies the rhubarb and the fresh ginger gives it an extra kick. It would be awesome with some frozen yogurt!

Base:
150g melted ghee, about 1x 200g pack of butter after cooking
113g flour
90g oats
85g brown sugar (optional – if you like soft biscuits, don’t add the
sugar, if you like a crunch, do!)
¼ tsp bicarbonate of soda
¼ tsp ground cinnamon
¼ tsp ground cardamom

Filling:
60ml water
55g brown sugar (more if you like your rhubarb sweet)
1 tsp vanilla
400g rhubarb, cut into pieces
2 tsps fresh ginger, diced.

Heat the oven to 180°C / 350°F / Gas Mark 4. Line a shallow baking dish with greaseproof paper.

Mix the dry ingredients in a bowl and add the melted ghee.

When mixed, put 1/3 of the mixture to the side.

Put the rest of the mixture into the baking dish and spread out and press down firmly.

Put the water in a pan and bring slowly to the boil. Add the sugar and allow to dissolve.

Add the rest of the filling ingredients and cook for about 10 minutes or until the rhubarb is well broken up and soft.

Pour the filling over the biscuit mixture and sprinkle the rest of the mix over the top.

Bake in the oven for 35 minutes and then cool on a wire rack.
