A yummy breakfast on the go!
300ml Avonmore Whole Super Milk
4 eggs
250g mushrooms, chopped
160g goat cheese, crumbled
100g whole wheat flour
15g butter
2 tsp fresh rosemary, chopped
1 tsp baking powder
Cooking spray
Salt and pepper
Grease a muffin pan with butter and heat oven to 180°C/350°F/Gas 4.
In a large pan, melt the butter. Add the mushrooms, half the rosemary, salt and pepper and saute for about 5 minutes.
Meanwhile, add the Avonmore Super Milk, eggs, flour, baking powder, salt and pepper in a medium bowl and whisk together.
Add the crumbled goat cheese and mushrooms and combine.
Divide the mixture evenly in muffin pan and top each muffin with the remaining rosemary.
Bake for 30 minutes, let cool slightly and remove from pan.
