Healthy chicken nuggets
Kids will devour these yummy homemade nuggets.

2 boneless chicken breasts

150g breadcrumbs

2 tsp cajun seasoning

Salt and pepper to taste

1 egg, lightly beaten

Preheat the oven to 180°C or gas mark 5. Line a baking tray with parchment paper.

Cut the chicken breasts into small chunks.

In a medium bowl, combine the breadcrumbs, salt, pepper and cajun seasoning together. Whisk the egg in another bowl. 

Dip the chicken in the egg then generously coat in the breadcrumbs.

Place the coated nuggets onto the baking parchment and bake for 20-25 minutes, turning once, until the chicken is golden and cooked through.
