Hearty vegetable soup

A robust vegetable soup that will keep the cold away.
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
4 bacon rashers, well chopped
1 courgette, chopped
1 carrot, peeled and chopped
3 celery sticks, sliced
½ cauliflower head, well chopped
400g tinned chopped tomatoes, retaining the liquid
1ml of chicken stock
115g small dried pasta shapes of choice
1 handful of flat parsley, chopped
100ml of balsamic vinegar
Salt and pepper
Heat the olive oil and fry the bacon in a saucepan on a medium heat until the bacon goes crisp. Add the onion and garlic and cook until the onion becomes translucent.
Add the carrot, celery, courgette and cauliflower.
Cook until the vegetables start to brown.
Add the stock, the tomatoes in their liquid and bring to the boil. Reduce heat and simmer for 20 minutes. Add the pasta and cook for 10 minutes or until the pasta is tender. Add the parsley and balsamic vinegar and stir well. Season with salt and pepper if necessary.
