Homemade carbonara sauce with penne pasta

This recipe shows just how easy carbonara is to make from scratch - no need for store bought sauce anymore.
300g penne pasta
2 tsp olive oil
2 slices thick cut rashers
3 large mushrooms, finely sliced
1 garlic clove, crushed
2 eggs
300ml cream
Handful Parmesan cheese, grated
Salt and pepper to season
Sprig of rosemary to garnish
Cook the pasta according to packet instructions. Drain and set aside.
While the pasta is cooking heat 1 tsp of the oil in a pan and gently fry the rashers on a medium heat for 3 minutes.
Add the chopped mushrooms and garlic and fry for another 3 minutes. Remove and set aside.
Cut your rashers into small bite sizes.
In a small bowl combine your eggs, cream and cheese together. Pour into a sauce pan and add your mushrooms, garlic and rashers. Bring to the boil before reducing the temperature and allow to simmer for 10 minutes.
Spoon the pasta onto four plates and pour the sauce over it.
Season with salt and pepper and garnish with a sprig of rosemary.
