Indian rice pudding

Indian rice pudding

100g basmati rice

1l milk

300ml single cream

Ground cardamom

3-4 tbsp sugar

1 tbsp rose water

Wash the rice then tip into a bowl. Cover with hot water and soak for about 10 minutes.

Place a heavy-bottom saucepan over the heat. Drain the rice then pour into the saucepan along with the milk, cream, cardamom and sugar. Stir well.

Bring to the boil. Sweeten to taste.

Lower the heat and let simmer for about 20 minutes.

Pour in the rose water and simmer for a few minutes more. Serve while hot.
