Lamb curry in a hurry
This is a great curry on the go, it packs a flavourful punch yet doesn’t take hours to make.
 

600g diced lamb

2 tbsp vegetable oil

1 onion, finely chopped

2-3 tbsp of your favourite curry paste

120ml water

1 carrot, diced

2 medium potatoes, chopped

110g frozen peas

125ml light coconut milk

Basmati rice

In a large saucepan on a relatively high heat, add in the oil, the diced lamb and brown on all sides. Add in the curry paste, the onions mixing well and cook for a further few minutes.

Add water, carrot and potatoes.

Reduce heat to low, cover and simmer for at least 30 minutes to one hour or until the lamb is tender.

Make the basmati rice according to the packet.

Stir in peas and coconut milk and heat through for 5 minutes.

Ready to serve once the rice is cooked.
