Prawn and harissa stew with couscous

Prawn and harissa stew with couscous

100g couscous olive oil, for frying

200ml chicken stock

1 onion, finely sliced

2 garlic cloves, crushed

1 tsp ground cumin

400g tin of chopped tomatoes

1-2 tsp harissa

150g raw peeled prawns

a small bunch of coriander leaves

Add the couscous to a bowl with 1 tbsp of olive oil and cover with boiling chicken stock. Cover and leave to soak up the moisture for about 5 minutes. Add roughly 1 tbsp of oil to a pan and tip in the onion and garlic and fry for about a minute until softened.  Add the cumin and fry for a further minute. Add in the tomatoes and harissa and simmer until it begins to thicken. Stir in the prawns and cook for 3 minutes. Garnish with coriander and serve with couscous.

Harissa is a fragrant spice mix which origanted in Tunisia. It can be used dry or blended to a paste with a little water or olive oil. It works wonderfully well with couscous, curries and grilled meats.
