Linguini with homemade tomato sauce

If you want a quick, healthy family pasta meal, look no further. Fast and delicious you cannot go wrong.
3 tbsp olive oil
1 medium onion, thinly sliced
3 garlic cloves, minced
6 medium, vine ripened tomatoes, chopped
1 chicken stock cube
300g dried linguini
Handful basil leaves, ripped into pieces
45g parmesan cheese, grated
In a large saucepan, heat the olive oil and cook the onion until tender or translucent on a medium heat. Stir gently while they are cooking so they don’t brown.
Add the garlic and cook for about one minute. Stir in the tomatoes and the stock pot or cube and drop the temperature down to a simmer.
Cook until sauce begins to thicken. This will take roughly, ten minutes. Scrape the edges of the sauce pan to collect all of the ‘dried’ looking bits of sauce and mix in.
Add in the basil.
Meanwhile, cook the pasta according to the directions on the packet and drain well.
Mix the pasta into the sauce and serve with the grated parmesan cheese.
If using, garnish with a leaf or two of basil.
