Linguini with sausage meatballs and tomato sauce
A nice spin on the classic spaghetti and meatballs. We like this because of the spinach sneak.

250g bag prewashed spinach

270g sausages

50g parmesan, grated

350g dried, linguini pasta

1 tbsp olive oil

1 tbsp olive oil (for sauce)

1 onion, diced

2 cloves garlic, minced

400g chopped tomatoes, drained

1 chicken stock cube

1 tbsp balsamic vinegar

1 tsp dried basil

1tsp dried oregano

2 tbsp grated parmesan cheese for garnish (optional)

Wash the spinach thoroughly and discard excess water.

For the sausages, remove the skins by cutting the tips off then squeezing the meat into a food processor.

Add the parmesan and spinach and blitz until well mixed.

Cook the pasta according to the instructions, drain and set aside.

Take the sausage mixture and roll into balls.

Heat 1 tablespoon of olive oil in a large frying pan, then add the sausage balls.

Cook over a medium heat until golden.

Remove from the pan and set aside in a bowl.

In the same frying pan, add the onion, gently frying until it becomes translucent.

Add in the garlic, tomatoes and stock cube and mix well.

Bring to the boil then add the balsamic vinegar and herbs then simmer for 10 minutes.

Add in the sausages and mix well.

Serve the pasta in a large bowl with the sausage meatballs over along with a sprinkle of parmesan cheese if using.

The sausages when cooking can spit, so be careful and use a splatter screen if you have one. If you do not have one, keep the sausages at a distance.
