Macaroni salad
A macaroni salad is a great way to celebrate American Independence Day without having to eat anything too heavy.
 

400g macaroni
1 red onion

2 stalks celery, chopped
1 large shallot, chopped
1 tbsp lemon juice
2 tbsp mustard

3 tbsp pickled relish

Salt and pepper, to season

1 carrot, chopped

5tbsp mayonnaise

Cook the macaroni in a large pot until soft. When ready, remove from pan, rinse with cold water and set aside.

In a food processor, add the onion celery, shallot, lemon juice and pickled relish.

Process until shredded and spoon into the mayonnaise. Give it a good mix.

Pour over the macaroni and chill in the fridge for an hour.
