Massive mushroom burger
Delicious meaty mushrooms make the perfect vegetarian burger.
 

4 large portobello mushrooms caps, wiped clean

3 tbsp balsamic vinegar

1 tbsp olive oil

½ tsp salt

¼ tsp coarsely ground black pepper

100g plain low-fat Greek-style yoghurt

1 tbsp chopped fresh rosemary

1 lime, zested and juiced

Burger buns or rustic rolls, each cut in half

Handful lambs lettuce or rocket (depending on what your child prefers)

1 large tomato, cut into 8 slices

1 red onion, thinly sliced

3 roasted red pepper drained, cut into strips

Preheat the grill to medium-high heat.

Place the mushrooms in a baking dish.

Whisk together the vinegar, oil, salt and pepper well and brush the mushrooms with the mixture. 

Let them soak in this mixture for 15 minutes.

Place the mushrooms on the grill rack and grill until tender, 4 to 6 minutes per side.

Transfer to a plate.

Combine the yoghurt, rosemary, zest and juice of the lime in a small bowl.

Brush the buns or bread slices with the yoghurt mixture.

Layer half the slices with the mushrooms, rocket, tomatoes, onions and red pepper strips.

Top with the remaining buns and serve.
