Meatball casserole
500g lean minced beef
4 carrots, chopped
2 red onions, chopped
2 tsp chilli powder
2 tsp olive oil
600g pot fresh tomato & basil soup
1 tsp dried mixed herbs
150g spaghetti (uncooked weight)
Preheat the oven to 180°C/350°F/Gas 4. Mix the mince with half of one of the chopped onions and the chilli powder. Shape into about 20 meatballs. Heat the oil in an ovenproof casserole dish and cook the meatballs, turning frequently, until browned.
Add the rest of the chopped onions and the carrots, and pour over the soup. Sprinkle with the mixed herbs and bake in the oven for 20 minutes. Meanwhile, cook the spaghetti and serve with the meatballs.
