Meatball soup

This soup is full of flavour and will fill you up until it’s time for dinner.
300g pork
1 medium egg
3 tsp basil
1 onion, finely chopped
30g peas
1 yellow pepper, sliced
100g fresh mushrooms, thinly sliced
1 clove fresh garlic, crushed
1 large tin tomatoes
900ml stock
100g rice
3 tsp olive oil
In a large bowl, combine the pork, egg, basil and half of the onion together. Roll the mixture into small balls and cook in a pan on a medium heat for 4 minutes.
In the same pan cook the rest of the onion for 3 minute before adding the peas, pepper, mushroom, garlic and tomatoes. Pour in the stock and bring to the boil before adding the rice.
Reduce the heat and allow to simmer until the rice is soft.
