Mexican chicken with fruit salad
This chicken and lime fruit salad is a great juicy summer dish.

2 tbsp olive oil

1 tsp chilli powder

½ tsp paprika

1 tsp grated lime zest (once you have used the zest keep the middle for serving)

½ tsp muscovado sugar

1 garlic clove, finely cut

1 onion, finely cut

4 chicken breasts

1 orange, peeled and cut

1 grapefruit, peeled and cut

Handful lettuce leaves

Handful chopped parsley

Ground black pepper to season

Mix oil with the chilli powder, paprika, pepper, grated lime zest, muscovado sugar, garlic and onion in a large bowl.

Put the chicken in the bowl making sure it is fully coated in the juice.

Cover with clingfilm and marinate in the fridge for 1 hour. 

Place the chicken on a wire rack and put under the grill for ten minutes on each side.

Serve with the orange, grapefruit and lime slices and lettuce leaves. Garnish with the parsley and pepper.
