Mexican potato omelette

Mexican potato omelette
This potato omelete is light yet filling making it perfect when you don't fancy a heavy dinner.
 
 

2 tsp olive oil

4 large potatoes, finely sliced

1 mild green chilli, finely chopped

4 large eggs

1 tsp hot sauce

Pinch salt and pepper

150g cheddar cheese, grated

1 heaped tsp parsley

Fresh basil leaves to garnish

Heat 1 teaspoon of oil in a frying pan on a medium temperature. Add the potatoes and cook until tender. Stir in the chilli and cook for a further minute.

Beat the eggs together in a bowl and set aside.

Spoon the hot sauce, salt and pepper, cheese and parsley into the pan.

Pour the egg over the potato mix. Leave to cook for about 5 minutes before flipping.

If you wish you can place it under the grill for 5 minutes to make the top really crispy.

Garnish with fresh basil before serving.
