Mini Minestrone

Mini Minestrone
This is a great soup as the days get colder. You can use any kind of small pasta shapes. We used Stellette star pasta shapes – the kids love it! Cut up some fingers of toast to serve and enjoy as a family!
 

2 onions, chopped
2 red peppers, chopped
1 courgette, grated
2 carrots, peeled and grated
200g tinned chopped tomatoes
700ml of low salt vegetable or chicken stock
120g pasta or spaghetti broken into small pieces

Prepare your vegetables, making sure they are cut up nice and small. Heat the oil in a heavy-based pan, add the onion and pepper, and sauté over a gentle heat for 6-7 minutes, until soft.

Grate the courgette and carrots, and add them to the saucepan. Add the stock and tinned tomatoes. Bring to the boil. Cover and simmer for 20 minutes.

Add in your pasta, and cook for a further 10 minutes, until the pasta is soft.

Serve straight away or store in your 24oz MummyCooks Portion pot and freeze for up to 3 months. If using from frozen, carefully defrost. Heat through fully before serving.
