Mini pistachio cakes

Lovely little nutty cakes with a cream cheese icing.
175g butter
175g caster sugar
2 eggs
1 tsp vanilla extract
140g ground pistachio nuts, plus extra chopped pistachios to decorate
75g plain flour
1 tsp baking powder
2 tbsp milk
Icing
290g cream cheese
50g butter
100g icing sugar
Preheat oven to 180°C/350°F/Gas 4.
Grease a 6 hole muffin tray and dust with flour, shake out the excess.
Beat butter and sugar.
Add eggs one at at time.
Beat butter and sugar.
Add eggs one at a time, beating between each addition.
Add vanilla and ground pistachios.
Sift in flour and baking powder.
Add milk and fold together.
Spoon mix into prepared muffin moulds and bake for 15 minutes.
Remove from the oven and leave to cool.
To prepare the icing, mix together cream cheese, butter and icing sugar.
Once the cakes have cooled, spread the mini cakes with the icing.
Scatter with chopped pistachios and serve.
