Mini Star topped Mince Pies

Tiny mince pies made in a mini muffin tin, perfect as a finale to the meal with coffee, or as part of a party buffet. Get the children to help with stamping out the stars.
1 500g block Jus-Rol™ shortcrust pastry
200g mincemeat
Water for brushing
Caster sugar for sprinkling
Preheat oven to 200°C (180°C for fan assisted)/400°F/Gas 6.)
Roll out pastry and using the round cookie cutter to cut out 16 cases. Use remaining pastry to cut out 16 stars.
Line mini muffin tin with the round cases and place 1 tsp. mincemeat in each and top with star shape. Brush star shapes with water and sprinkle lightly with caster sugar.
Bake for 12 -15 minutes until pastry golden brown.
