Mixed berry tartlets

A yummy fruity treat!
4 tbsp caster sugar
1 passion fruit
3 tbsp blackcurrant preserve
18 all butter sweet pastry tartlets
125g mascarpone cheese
2-3 tsp icing sugar, extra to dust
18 blueberries
18 raspberries
18 blackberries
Put the caster sugar in a pan with 2 tbsp of water & simmer to dissolve.
Remove from the heat, then cut the passion fruit in half & scoop out the flesh, stirring to combine. Leave to cool.
Put half a teaspoon of the blackcurrant preserve into each tartlet.
Sweeten the mascarpone cheese with icing sugar to taste and use to fill the mini tartlets.
Decorate with the fruit & then drizzle with the passion fruit syrup.
Dust with icing sugar to serve.
