Mushroom melts

Mushroom melts
Lovely rustic toast with melted cheese and mushrooms and a hint of garlic.
 

Knob of butter

2 tsp olive oil

400g chestnut mushrooms, finely sliced

1 garlic clove, finely sliced

Fresh coriander

75g white cheddar, Edam or other white cheese, grated

Rustic loaf, sliced

Melt the butter and oil in a pan and fry the mushrooms for 2-3 minutes.

Add the garlic, and cook until the mushrooms are soft.

Season with salt and pepper.

Heat the grill to high, add the cheese and mushroom mixture over top and toast until the cheese has melted.

Top with coriander and serve.
