Noodle cakes

These easy to eat noodle cakes are packed full of veggies.
1 courgette
1 carrot, sliced
1 parsnip, sliced
1 red pepper, sliced
100g broccoli, finely cut
3 tbsp olive oil
1 clove garlic, crushed
300g rice noodles
2 eggs
1 tbsp soy sauce
1 tsp sesame oil, plus extra to serve
In a pot of water, cook your noodles according to the packet instructions.
Add the oil to a sauce pan and gently cook the vegetables until they are tender. Add the garlic and cook for a further minute.
Combine the vegetables into the noodles.
In a medium sized bowl, whisk the eggs with the soy sauce and sesame oil.
Pour over the vegetables and noodles and stir well.
Divide the noodle mix into four batches and gently cook in a frying pan for 4 minutes on each side.
Make sure they don’t burn.
