Orange polenta cake
Lovely moist gluten free orange syrup cake

200g butter

200g demerara sugar

3 eggs

200g ground almonds

100g polenta

2 oranges, zested

1 tsp gluten free baking powder

Syrup

250ml orange juice

125g caster sugar

Preheat oven to 160°C/320°F/Gas mark 2½

Grease and line a 23cm cake tin.

Beat butter and sugar.

Add eggs in one at a time, beating between each addition.

Add in ground almonds, polenta and orange zest and mix.

Sift in baking powder and combine.

Pour the mixture into the prepared cake tin and bake for around 45 mins.

Remove the cake from the oven.

Melt orange juice and caster sugar until sugar dissolved and slightly thickened.

Pour syrup over the cake while still warm in the tin.

Allow to soak in, then remove the tin.

Slice and serve with a dollop of natural yoghurt.
