Pasta with green goddess sauce

Pasta with green goddess sauce
Loaded with greens, this sauce is healthy and hearty.
 

400g pasta

100g bag baby spinach

140g frozen peas

Small bunch basil, leaves picked, a few reserved to serve

3 tbsp green pesto

150ml single cream

50g parmesan (or vegan alternative), grated, plus a little extra to serve

Cook the pasta according to the instructions.

Boil the kettle, put the spinach and peas in a bowl, and cover with the boiling water.

Leave for a few minutes until the peas are tender, then drain well.

Tip the vegetables into a food processor, add the basil, pesto, cream and parmesan, and blitz to make a smooth sauce.

Drain the pasta, reserving a little of the cooking water, and return to the pan.

Pour over the sauce and mix well over a low heat.

Add a little pasta water to loosen the sauce.

Season with salt and pepper to taste and serve with extra parmesan and scatter with basil leaves, as garnish.
