Peach melba knickerbocker glory

The pairing of raspberries and peaches works so well and kids will simply adore this retro dessert!
300g raspberries
50g caster sugar
200ml double cream
4 ripe peaches, halved, stones removed
8 scoops good-quality vanilla ice cream
Wafers to serve
Mix half of the raspberries with half of the sugar and a little water in a food processor to form a raspberry sauce. Pour into a bowl. In another bowl, using a whisk mix the cream with the rest of the sugar until stiff and leave aside. Slice the peaches and in tall sundae glasses, layer the peach slices, raspberries and sauce finishing with generous scoops of ice cream, a spoon of whipped cream and a sprinkling of flaked almonds or sprinkles if desired. Serve with long spoons and wafers.
