Penne ‘ziti’ casserole
Using lean beef helps this classic pasta casserole cling with flavour and is surprisingly lower in calories than the norm.
 

500g beef mince

2 large carrots, grated

400g condensed tomato soup

475ml water

250g penne pasta

2 tbsp fresh basil

1 tbsp onion powder

1 tsp garlic powder

100g mozzarella cheese, grated

50g parmesan cheese, grated

Use a large pan to brown the beef and grated carrot over medium heat.

Drain off the fat.

Stir in tomato soup, the water, uncooked penne, onion powder, and garlic powder and bring everything to the boil

Reduce the heat and cook, covered for 25 minutes, stirring occasionally until the penne is tender.

Stir in fresh basil and mozzarella cheese and serve with the parmesan cheese for everyone to sprinkle over individually if they like.
