Peter's 15 minute smoked bacon and potato frittata

6 large eggs
3 smoked back bacon rashers (rind & fat removed then chopped)
400g of Keogh’s Easy Cook Jacket Potatoes, (cooled & chopped)
Half small red onion finely diced.
Half green pepper chopped.
One large tomato chopped.
75g cheddar grated
Thyme & parsley chopped.
Salt & pepper to taste
1 tbsp. sunflower or olive oil
Place a pack of our Easy Cook Jacket Potatoes into the microwave for 9 minutes. Allow to cool and chop into slices. (Alternatively place 2 palm sized potatoes into a pot, cover with water and boil until soft).
Pre-heat oven to 200°C.
Heat 2 tablespoons of oil in a pan and add bacon, onion, pepper, tomato and potato.
Add the herbs, salt & pepper and stir well.
Whisk the eggs in a bowl and pour into the pan evenly.
Top with grated cheese and place into the oven until puffed & golden (approx 5 minutes).
