Polenta Pudding with Blueberry Sauce for Baby
Siobhan Berry of www.mummycooks.ie shares a delicious recipe for your weaning baby. This purée makes for a delicious breakfast or dessert.

150g blueberries
250ml milk
250ml + 2 tbsp water
50g quick cook polenta
Natural Yoghurt to serve

Place the blueberries in a saucepan with 2 tbsp of water, and cook over a low heat for about 10 minutes until they are nice and soft. 

Place the blueberries in your blender, and blend until smooth. 

In another saucepan, bring the milk and 250ml of water to the boil. Remove from the heat and gradually add in the polenta, stirring continuously. 

Once all of the polenta has been added and the mixture is fully combined, place back over a low heat, stirring continuously for 6-8 minutes until the mixture thickens. 

Serve the polenta topped with some natural yoghurt and the blueberry purée.

Allow to cool for up to 2 hours, and then place in your fridge for about half an hour. Your polenta is now ready to go into the freezer. Place your MummyCooks containers into a ziplock bag, and label the bag. Use within 3-4 months.
To defrost: Place in the fridge overnight or use the defrost button on your microwave. Never let it defrost on the counter top.
