Potato and courgette soup

This is a great alternative to the traditional potato and leek soup. You can use vegetable stock it you don't want an overpowering flavour.
2 tbsp olive oil
2 cloves garlic, chopped
2 onions, roughly chopped
1 large potato, diced
1 large courgette, roughly chopped
960ml stock (vegetable or chicken)
1 tsp coriander
1 tsp lemon juice
1 tsp salt
Heat the olive oil in a large saucepan and add the garlic and onion. Gently cook until they are soft.
Pour in the potatoes and courgette and cook for about 2 minutes. Pour in the stock and bring to the boil.
Reduce the heat and allow to simmer for about 15 minutes or until the potatoes are soft. Add your coriander.
Pour the ingredients into a blender until smooth.
Add your lemon juice and season with your salt.
