Prawn and mango salad

Prawn and mango salad
This light and fruity salad is so clean and crisp, ideal for a light lunch or supper.
 

2 large handfuls rocket leaves

1 small handful mint, chopped

1 handful coriander leaves, chopped

200g king prawns, cooked and peeled

½ avocado, sliced

½ mango, sliced

60ml lime juice

50g walnuts, for scattering as garnish

Use a large bowl to combine rocket, mint and coriander then divide between 2 serving bowls.

Arrange the, prawns, avocado and mango on top

Sprinkle lime juice over the top and serve with walnuts.
