Prawns with garlic spaghetti
The two star ingredients, prawns and garlic make this dish irresistible. It’s fast and delicious.
 

300g spaghetti

2 tsp butter

2 tsp olive oil

4 garlic cloves, minced

20 large fresh prawns, peeled, deveined and cut in half lengthways

1 tsp lemon zest

2 tbsp lemon juice

118ml vegetable stock

20g flat leaf parsley, chopped

¼ tsp chili flakes (optional)

Bring a large saucepan of salted water to the boil, add the pasta until cooked then drain and set aside.

In a large non-stick pan, on medium heat melt the butter and heat the oil.

Reduce the heat to medium, add the garlic, lemon zest and juice for 1-2 minutes then toss in the prawns and cook until the prawns turn pink and are tender.

Add the stock and heat through gently.

Add the drained pasta to the frying pan with the parsley and toss to combine. If using, add the chili flakes and stir through.

Serve directly.
