Healthy sandwich for kids lunch boxes, full of vitamins and minerals.
2 slices Johnston Mooney & O'Brien Goodness Of Both Bread
1 avocado
Handful alfalfa sprouts
2 tbsp hummus
½ lemon, juiced
Mash the avocado, add lemon juice and mix.
Spread one slice of bread with hummus.
Spread the other slice of bread with avocado.
Scatter with the alfalfa sprouts.
Bring together to make a sandwich and slice.
Half wrap the sandwiches using baking parchment and twine.
