Quinoa, beans and feta salad

Quick and filling: a new lunchbox staple!
2 cups cooked quinoa
200g canned black beans
200g Green Giant Original Sweet Corn
80g feta, crumbled
2 spring onions, finely chopped
A bunch of fresh coriander, chopped
2 tbsp olive oil
1 tbsp lime juice
1 tbsp apple cider vinegar
½ tsp red pepper flakes
1 red chilli, finely chopped (optional)
Salt and pepper
Make the dressing: combine lime juice, vinegar, olive oil, red pepper flakes, salt and pepper. Mix well.
In a large mixing bowl, combine the cooked quinoa, feta, black beans, corn, spring onions and coriander. Add the dressing and toss to coat all the ingredients well. Keep refrigerated. Before serving, top with red chilli if desired.
