Quinoa salad with roasted vegetables

200g quinoa
3 tbsp olive oil
1 red onion, chopped into slices
2 peppers , any colour, chopped into strips
200g courgettes, chopped into rounds
3 garlic cloves, unpeeled
zest and juice 1 lemon
Pinch of sugar
Cook the quinoa according to instructions, drain well and set aside
Preheat oven to 180°C/350°F/Gas 4.
Toss the onions and peppers with oil and place on a baking tray to roast for 10-15 minutes.
Tip in the courgettes and garlic and mix, roast the vegetables for a further 15 minutes
Remove the garlic cloves from their skins and mash.
Combine with the oil, lemon juice and a little sugar. Drizzle over the quinoa and stir through the vegetables.
