Ratatouille

Ratatouille
This vegetable stew is packed full of delicious veggies. 
 

15ml olive oil

½ onion, sliced

4 garlic cloves, minced

1 courgette, roughly chopped

3 large mushrooms finely sliced

1 red pepper, roughly chopped

1 yellow pepper, roughly chopped

4 cherry tomatoes, quartered

Pinch salt and pepper

Fresh basil to garnish

Pour the oil into a frying pan and heat on a medium to high temperature.

Cook the onion and garlic for about 2 minute or until soft but don’t allow them to burn

Add the courgette and mushrooms and cook for a further 5 minutes.

Next, add the peppers and tomatoes. Season with salt and pepper and cook for about 10 minutes or until the vegetables are tender.

Add the basil and season with more salt and pepper if needed.
