Ricotta gnocchi
Add a twist to the traditional gnocchi with this delicious Italian cheese.

500g ricotta

60g parmesan, finely grated

2 tsp lemon juice

1 egg, lightly beaten

100ml cream

Handful pine nuts, finely cut

Combine the ricotta, parmesan,  1 tsp lemon juice and egg together in a large bowl.

Gently roll your ricotta mixture into small sausage shapes approx. 2cm thick.

Place in a large pot of boiling water. Cook the gnocchi for a few minutes before removing from the water. Place in a bowl.

Drain the pan and add the rest of the lemon juice and cream to the pot. Heat the mixture on a medium temperature for about 3 minutes before pouring over your gnocchi.

Sprinkle on the pine nuts before serving
