Rustic macaroni cheese
Here's a quick and nutritious meal made from store cupboard essentials.

300g macaroni (or any pasta shape)
40g butter
40g plain flour
600ml milk
250g grated cheddar
50g grated parmesan
1 tsp Colman's English Mustard (yes - a whole teaspoon)
OPTIONAL: Grated carrot, chopped ham

Cook the macaroni or pasta in a large pan of boiling salted water for 10-12 minutes; drain and set aside.

Melt the butter in a large pan over a medium heat. Add the flour and stir to form a roux, cooking for a few minutes, until it resemble bread crumbs.

Gradually whisk in the milk, a little at a time. Cook for 10-15 minutes until it thickens to a smooth sauce.

Preheat the grill.

Remove the sauce from the hob, add 3/4 of the cheddar and the mustard; stir until the cheese melts fully. Stir in the carrot or ham now, if using.

Add the cooked pasta to the sauce and mix well. Transfer to an ovenproof dish.

Sprinkle over with the remaining cheddar and the parmesan. Place the dish under the hot grill and cook until the cheese is golden brown and bubbling.

Serve straightaway.
