Rustic soup

This is such a warming soup, ideal for a cold wintry day.
1 onion, peeled and diced
1 large carrot, peeled and chopped
1 celery stick, chopped
1 tbsp olive oil
1 clove garlic, crushed
1 bay leaf
1 x 400g tin of chopepd tomatoes
1 x 400g borlotti beams, drained
1 litre chicken stock
200g cooked ham, cut into chunks
salt and freshly ground pepper
Parsley leaves, to garnish
In a large pan, sweat the onion, carrot and celery in the oil until soft.
Add the garlic and bay leaf and cook for a further 5 mins.
Mix in the tomatoes, beans and stock
Simmer for about 20 mins until the carrots have softened.
Ladle about half the soup into a blender and blitz until almost smooth, then return to the pan.
Add the ham and cook for about 5 mins until heated thoroughly, and season if required
Garnish with fresh parsley.
Serve hot with fresh bread.
