Schupfnudeln
Schupfnudeln is a traditional German recipe that is perfect for using up leftover potatoes. 
 

6 large potatoes, peeled and roughly cut
2 eggs
Salt and freshly ground black pepper, to season
50g flour, plus extra for rolling
1 tbsp olive oil

Put the potatoes in a pot of boiling water and boil until soft.

Drain the water and add the eggs, salt and pepper and flour.

Mix together until it is fully combined.

Knead for 10 minutes before turning out onto a floured surface. Roll until it is about 1 inch thick. Cut into chip shapes.

Place into a pot of slightly salted water and bring to the boil. Continue to boil until they rise to the top.  

Remove from pot and drain.

Heat the oil in a frying pan on a medium temperature and fry the schupfnudeln until they are golden brown and crispy. 

Season with salt and pepper before serving.
