Simple beef stroganoff

Easy to prepare and make for a large party, ideal for a no stress main course.
4kg stewing beef, trimmed of excess fat where needed
2 large onions, chopped
450g mushrooms, trimmed and halved (or quartered, if large)
4 tbsp cornflour
200ml reduced fat sour cream
4 tbsp Dijon mustard
Cooked rice, for serving (allow for 75g per person)
Chopped fresh dill and parsley for garnish (optional)
Preheat the oven to 180°C / 350°F / Gas mark 4.
Using a large and heavy ovenproof pot, toss the beef, onion and mushrooms with 1 ½ teaspoons of coarse salt and a teaspoon of pepper.
Add 475ml of water, cover tightly and cook for 2 hours until the meat is tender then remove from the oven.
Whisk the cornflour with 2 tablespoons of water.
Ladle 235ml of the cooking liquid in and whisk to combine.
Pour into a small saucepan, bring to a boil and cook until thickened.
Stir the cornflour mixture in with the beef, then the sour cream and mustard.
Serve the beef over the cooked rice and sprinkle with dill and parsley, if desired.
