Spiced glazed almonds

1 tbsp olive oil

225g roasted salted whole almonds

4 tbsp sugar

1 tsp smoked or sweet paprika

1 tsp freshly ground black pepper

Pour the oil into a frying pan and set to a  high heat. Tip in the almonds and stir until they are well-coated. Season with sugar, pepper and paprika. Fry for about 5 minutes while stirring non-stop until golden and caramelised.

Lay out the almonds on a baking tray and let them cool down and harden. Break them apart then heap up into bowls and serve.
