Spiced lentil and ginger soup
Lentils are a great way to keep fuller for longer and they are low in fat too. This soup has just 74 calories. 

Olive oil

1 medium onion, finely chopped

1 large carrot, peeled and diced

2 sticks celery, diced

2 garlic cloves, crushed

25g ginger, peeled and grated

1 red chilli , finely sliced

1 tbsp medium curry powder

150g red lentils, rinsed

400g tin chopped tomatoes

800ml water

2 tbsp low-fat natural yogurt, to serve

Heat 1 tbsp oil in a large pan and fry the onion, carrot and celery for five minutes.

Tip in the garlic, ginger and chilli and fry for a further minute or two. 

Mix in the curry powder and 4 tbsp cold water.

Cook for 2 minutes, constantly stirring.

Add the lentils and tomatoes into the pan.

Add the water, followed by seasoning.

Bring to the boil and simmer for 30-40 minutes until the lentils have softened and the soup is thicker. 

Season them and bring to the boil.

Simmer for 30-40 minutes until the lentils are very tender and the soup is thickened.

Blitz with a hand blender if desired and serve with a dash of low-fat natural yoghurt.
