Spicy black bean fajitas with avocado salsa
A yummy vegetarian dinner your family will love!

1 tbsp olive oil

1 onion

2 cloves garlic

1 red chilli, deseeded

2 tsp ground cumin

1 tsp paprika

1 tsp ground coriander

1 red pepper

2 tins black beans, drained

1 tin chopped tomatoes

1 tbsp tomato puree

Pinch sugar

Salt and pepper

1 bunch coriander, washed and roughly chopped

For the salsa

1 large ripe avocado

150g ripe cherry tomatoes, chopped in quarters

Juice 1 lime

1 red chilli, deseeded and chopped

1 clove garlic, crushed

1 small bunch coriander, washed and chopped

To serve

8 flour or corn tortillas

Grated cheese such as mature cheddar or manchego

Sour cream

Heat the oil in an ovenproof casserole dish. Use the Bosch multi talent food processor with the universal blade attached to chop the onion. Fry the onion over a medium heat for 5 minutes or until soft. Chop the garlic and chilli in the food processor and add to the pan, cook for another minute.

Stir in the cumin, paprika and ground coriander and cook for about a minute being careful not to let the spices burn.

Add the red pepper, beans, tomatoes, tomato puree and sugar. Bring to the boil then cover with a lid and transfer to the oven and cook for 30 minutes at 170°C.

While the beans are cooking make the avocado salsa. Cut avocado into small chunks and transfer to a mixing bowl. Add the tomatoes, lime juice, chilli, garlic and coriander. Season well with salt and pepper.

Wrap the tortillas in foil and put in the oven for 8 minutes to heat through.

Remove the casserole from the oven. Season with salt and pepper and stir well. Scatter over the fresh coriander.

To serve. Place some of the black beans in a tortilla, then sprinkle over some sour cream, cheese and avocado salsa. Roll up and serve immediately.
