1 red onion, peeled and thinly sliced

1 ripe mango, peeled, stone discarded and cut into fine strips
4tsp roughly chopped toasted cashew nuts
For the marinade
1tsp dark soy sauce
1tsp sweet chilli sauce
Juice of ½ lime
1tsp mild curry powder
1 garlic clove, peeled and crushed
Pinch caster sugar
2tbsp torn fresh basil leaves
2tbsp sunflower oil
For the dressing
1 tsp caster sugar
2tbsp dark soy sauce
1tbsp sweet chilli sauce
Juice of 1 lime
4 tbsp sunflower oil
