Strawberry tarts

350g ready-made sweet shortcrust pastry
150ml double cream
Flour, for rolling out
1 tbsp lemon curd
½ punnet strawberries
2 tbsp strawberry jam, without any whole strawberries in it
Preheat the oven to 160°C/gas 4. Roll the pastry out on a floured surface until it's about a ¼ inch thick. Using a round cookie cutter or a jam jar cut four circles out and put each one into a tin.
Put a square of greaseproof paper and some rice in each. Pop them in the oven for 25 minutes, and then remove the paper and rice. Set aside to cool.
Whisk the cream until it starts to thicken and then mix in the lemon curd and then stir in the lemon curd.
Slice the strawberries and then place on top of the tart. Mix the jam in a bowl with 1 tbsp of hot water and brush over the strawberries. Spoon the cream on top.
