Sweet and savoury potato pie
A nice dish for fussy eaters, and offers plenty of healthy ingredients and a nice dose of protein.
 

500g minced chicken, turkey, beef or lamb

2 tsp olive oil

1 onion, finely chopped

2 carrots, finely chopped

200g frozen peas

1 stock cube (optional)

300g tinned baked beans

2 sweet potatoes, peeled and chopped

50g white cheddar cheese, grated

Preheat the oven to 190°C / 375°F / Gas mark 5.

Place the sweet potatoes into a large pan of water and bring to the boil.

In a large pan, heat the oil and add the chopped onions and carrots and gently fry for 3-4 minutes until the onions have softened.

Add the mince and brown it along with the stock cube if using.

Add the peas and beans and continue to cook for another couple of minutes, stirring occasionally.

When the potatoes are tender, drain (retaining a bit of water in the pan) and mash well.

Empty the mince into a large ovenproof dish and spread the sweet potato mash on top.

Sprinkle cheese over the top if desired and bake in the oven for 40 minutes.
