Thai drumsticks
Aromatic Thai finger food with a delicious saucy marinade.
 

2 tbsp sweet chilli sauce

Grated zest 1 orange, plus 2 tbsp juice

1 garlic clove, crushed

1 tbsp good-quality Thai red curry paste

8 chicken drumsticks, the skins slashed

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a baking tray with foil. In a large bowl, mix the chilli sauce with the orange zest and juice, garlic, curry paste and ¼ teaspoon of salt.

Add the chicken and coat thoroughly.

Allow to marinate for 20 minutes.

Arrange the drumsticks on the prepared tray, spaced apart.

Coat the chicken with any marinade left in the bowl, then roast for 35-40 minutes until tender, turning halfway through the cooking process to the skins crisp up evenly.

Serve with a salad of your choice.
