Toffee apples
The perfect treat for Hallowe'en night.  Juicy apples are dipped into a sugar syrup and allowed to set - the crunch of the toffee, goes really well with the sweet, crisp interior of the apple.

225g demerara sugar

25g butter

2 tbsp golden syrup

110ml water

½ tsp vinegar

For the apples

6 eating apples (red or green)

6 lollipop sticks (or wooden skewers)

Lightly oil a baking tray and set aside.

Put the water and sugar in a saucepan and dissolve over a moderate heat. When it has dissolved, stir in the syrup, vinegar and butter. Bring to a boil and cook without stirring until it reaches hardcrack stage which is around 138C or when hardens into a ball when dropped in a cup of cold water. This normally takes around 10 minutes boiling time.

While the syrup is cooking, stick the lollipop stick into each apple.

Once the toffee is ready, dip each apple into the hot toffee, turning it around in the syrup to ensure that each one is fully coated.

Leave to harden on prepared baking tray before serving.

If you want to make in advance of Hallowe'en night, wrap them in cellophane and they will keep for a few days.
